Spinach & Strawberry Salad

Yields: 4 Servings

Salads are refreshing especially in the summer.  This week I’m making my Spinach & Strawberry Salad.  Spinach goes really well with strawberries so I wanted to add them to this salad.  Spinach is a healthy choice in a salad and now comes packaged conveniently in prewashed bags.  I like to use baby spinach because they are more tender and have smaller leaves.  Spinach has Vitamins A, C and K and lots of fiber.  Strawberries are also rich in Vitamin C.  I use Raspberry Balsamic vinegar in the dressing for flavor and because it nicely coats the spinach.  Happy Cooking!
