French Green Beans

French green beans are a great vegetable addition to any dinner.  Also called Haricots Verts this type of green beans are longer and skinnier than regular green beans.  They are harvested earlier than regular green beans and considered to be more tender and flavorful.  When cooking fresh French green beans you’ll need to remove the tip of the stem but there’s no need to remove the tail end.  You can buy these beans fresh, frozen or canned.  They can be steamed or boiled in some water on your stovetop in about 10-15 minutes, depending on the doneness level you prefer.

My French Green Beans are flavored with a little bacon and butter to enhance their flavor.  They make a tasty side dish to any meal.  Happy Cooking!

  • Mince up onion and bacon pieces. Rinse fresh French green beans. Remove the tip of the stem with a small knife. The stem has a small string on it. There's no need to remove the tail end. Cut green beans in half.
  • In a saucepan sauté the onion in the bacon and butter. Cook on medium heat for 5 minutes. Add the trimmed green beans to the saucepan with water, salt and pepper. Stir all ingredients together. Bring water to boil, covered and then turn down to simmer on low heat. Let cook for 10-15 minutes.
  • Test the green beans for doneness by piercing with a fork, they should be tender. Don't overcook beans or they will lose their vibrant color. Serve immediately.
