Italian Cheese Quick Bread

Yields: 8 Servings Difficulty: Medium Cook Time: 45 Mins

When I serve up a hearty soup or gumbo I like to make my Italian Cheese Quick Bread.  Quick breads do not contain any yeast and are easy and fast to make and bake.  I use grated Pecorino Romano cheese for this recipe.  You could substitute it with Parmesan cheese if you need to.  Since this bread does not contain yeast it also does not need to be kneaded.  Just mix together all the ingredients and bake it in a loaf pan.  If you are serving this bread with my Shrimp and Sausage Gumbo you can start it once the gumbo is simmering in the pot.  Since this quick bread will bake at 350* for around 45-60 minutes, both dishes will finish at about the same time.  Let this bread cool for 15 minutes on a rack before slicing.  Happy Cooking!

  • Grease a loaf pan. Assemble all dry ingredients in a large mixing bowl; flour, salt, baking powder, baking soda, sugar, and grated cheese. Using a whisk, mix all ingredients together until blended.

  • Melt the butter in the microwave in a small bowl for 25 seconds on high. Set aside. In a small bowl beat together the egg and milk with a fork. Stir milk mixture into dry ingredients using a spatula. Add melted butter and sour to mixing bowl and stir until it forms a batter.
  • Pour batter into loaf pan and push into corners using spatula. Sprinkle batter with sugar, oregano and more cheese. Place in oven for baking.
  • Bake in 350* oven for 45-60 minutes. Top of bread should be lightly browned and have a nice dome. Check doneness by poking a fork in the center of the bread that comes out clean. Place on rack and let cool for 15 minutes before slicing.
