Spinach & Strawberry Salad

Salads are refreshing especially in the summer.  This week I'm making my Spinach & Strawberry Salad.  Spinach goes really well with strawberries so I wanted to add them to this salad.  Spinach is a healthy choice in a salad and now comes packaged conveniently in prewashed bags.  I like to use baby spinach because they are more tender and have smaller leaves.  Spinach has Vitamins A, C and K and lots of fiber.  Strawberries are also rich in Vitamin C.  I use Raspberry Balsamic vinegar in the dressing for flavor and because it nicely coats the spinach.  Happy Cooking!

Ingredients
  • 1 bag baby spinach
  • 1 pt fresh strawberries
  • 4 oz mushrooms
  • 1/2 Vidalia onion
  • 1/4 cup sunflower seeds
  • 1/2 cup vegetable oil
  • 1/4 cup raspberry balsamic vinegar
  • 1/4 cup maple syrup
Instructions
    Assemble salad
  1. Slice up Vidalia onion into strips. Slice up mushrooms and strawberries. Remove stems from spinach leaves. Place all ingredients in a large salad bowl and set aside. Measure out sunflower seeds and set aside.
  2. Make salad dressing
  3. Add raspberry balsamic vinegar, vegetable oil, maple syrup, salt & pepper to a bowl. Whisk together until combined. Pour over spinach salad and toss together. Sprinkle with sunflower seeds. Serve immediately.
