Vanilla Buttercream Icing

One of my favorite cupcake toppings is my Vanilla Buttercream Icing.  This creamy icing is made from butter and not shortening.  It is sweet and fluffy and has a smooth texture.  Try this tasty icing on my Mardi Gras Vanilla Cupcakes.  You’ll need an electric mixer to whip up this delightful cupcake topping.  You’ll also need to let the butter soften at room temperature before whipping it up for your cupcakes.  You can adjust the thickness of this icing by adding additional milk to the recipe.  Happy Cooking!

  • You'll need an electric mixer for this icing. Let butter soften at room temperature for at least an hour. Add softened butter to mixer bowl. Using your whisk attachment beat the butter until light and fluffy.
  • Adding one cup at a time, add the confectioner's sugar to the mixing bowl along with the milk, salt and vanilla. Once all 10X sugar has been added to mixer bowl continue beating on high speed until smooth and creamy. Add additional milk to icing if it seems too thick.
  • Spread icing onto cooled cupcakes with a bread knife. Or, spoon the icing into a quart-sized plastic bag with a spatula. Squeeze icing into bottom of bag and cut off the end with scissors. Then, gently squeeze icing onto cupcakes in a circular pattern. Sprinkle with colored sprinkles immediately after icing the cupcakes.
