Steamed Asparagus & Vegetable Medley

Steaming vegetables is a great way to cook them so they retain their bright colors and some crispness.  You can steam your vegetables by placing water in the bottom of a saucepan, bring it to a boil and then place a steam pan or steam basket over the water.  My Steamed Asparagus & Vegetable Medley dish is a tasty vegetable dish with asparagus, yellow bell peppers and mushrooms.  Asparagus is a perennial flowering plant species that’s in the lily family.  Asparagus is a very nutritious fibrous vegetable containing antioxidants and high levels of Vitamins A, C, D, E and K, folate and Potassium.  Bell peppers and mushrooms are also high in nutrients and add lots of color and flavor to this dish.   Happy Cooking!

  • Rinse asparagus and cut off bottom 5 inches of woody ends. Fill the bottom of a saucepan with cold water and soak asparagus stalks for 5 minutes. Cut yellow bell pepper into strips. Slice up mushrooms.
  • Remove asparagus from water and place into steam pan or steam basket with the bell pepper, mushrooms and butter. Sprinkle all vegetables with salt, pepper and garlic powder. Heat up water in saucepan and bring it to a boil where it starts steaming.
  • Then, place steam basket or steam pan over saucepan with boiling water and let steam for 3 minutes, covering pan with a lid. Remove lid from saucepan and continue steaming for 6-7 additional minutes to desired doneness. Serve vegetables immediately.
