Italian Style Green Beans

Happy Father’s Day!  Fresh Jersey green beans are a great vegetable to add to your summer menu.  I like to jazz up my green beans so I’ve created my Italian Style Green Beans this week.  Green beans are the edible fruit of the common bean plant and are also called string beans.  They have a mild, sweet flavor and a crisp texture.  They are generally available year round and are in season in the summer.  Look for a bright, green color and sheen and they should feel firm and crisp not soft or limp.  Beans stay fresh in your refrigerator crisper in an open plastic bag for 3-5 days.  Beans are nutritious and contain Vitamins C, A, K, potassium and folate. To prep the beans for cooking trim off both ends and cut in half.  Happy Cooking!

  • Prep beans by trimming off each end using a sharp knife. Cut the beans in half. Set aside. Slice up the onion, chop up the tomato and mince the garlic. Sauté in a heated skillet in 1 T oil, the onion, tomato, garlic and basil for several minutes.
  • Add the green beans and water to the pot. Bring to boil and then simmer on low for 5-7 minutes. Stir occasionally and check for doneness by using a fork. If you like to eat a softer bean cook for several extra minutes. Serve warm.
