Spanish Beef, Rice & Beans

Rice and beans are a staple in many countries around the world.  My Spanish Beef, Rice & Beans dish is one of my families favorite.  I used beef stew cubes in this recipe because they become tender and delicious after cooking in the broth.  This time of year you’ll be able to find all of the produce fresh from your farmer’s market.  This dish has onion, green peppers and Jersey Fresh tomatoes.  If you can find canned diced tomatoes with chili peppers you’ll add some extra flavor and heat to the dish.  If you can’t you can just add some canned jalepenos with a can of diced tomatoes.  This dish takes a while on the stovetop but it’s well worth the effort.

  • Dice up onion, slice up green pepper and cut up tomatoes. Dice up garlic. Set them aside. Drain black beans in colander under cool running water. Set aside.
  • Heat up skillet on medium high heat. Season beef cubes with salt, peppers and thyme. Add 1 T oil to skillet and add beef cubes. Sauté beef cubes until browned on both sides. Pour beef into bowl and set aside. Next, sauté onion, peppers and tomatoes in skillet for 5 minutes. Add garlic. Stir in beef, beans, rice, diced tomatoes and beef broth.
  • Bring skillet to boil, then lower heat to a simmer and cook for 30-45 minutes. Stir skillet occasionally. The dish is cooked through when the rice is tender. Serve garnished with shredded cheese.
