Peanut Butter Fingers

My husband, Gary, is a big fan of peanut butter so he really loves my Peanut Butter Fingers cookie bars.  I like to use a crunchy style peanut butter for these cookies.  They also have some oats in them which gives them a denser chewy texture.  These cookie  bars will remind you of the many commercial breakfast bars and snack bars that are so popular right now.  I bake these cookies in a 13″x9″ baking pan which makes them faster to prepare than other types of individual cookies.  You can cut the bars into many different sizes and shapes for variety.  I icing the Peanut Butter Fingers cookie bars with a peanut butter glaze which adds more flavor.  Happy Cooking!

  • Preheat oven to 350*. Using an electric mixer add wet ingredients to mixing bowl and cream together the butter, sugar, and brown sugar. Cream on medium speed until smooth. Add egg, peanut butter and vanilla to bowl and mix until well blended. In a separate bowl combine dry ingredients; flour, oats, baking soda and salt and stir with a whisk. Add ingredients to mixer and mix until well combined.
  • Spray a 13" x 9" oblong pan with cooking spray. Pour batter into pan and spread it across the bottom of the pan, first using a spatula and then a tablespoon. Bake for 20 minutes at 350* until lightly browned. Remove from oven and let cool on a rack for 20 minutes.
  • Make peanut butter glaze in your mixing bowl - add peanut butter, confectioners sugar and milk to bowl and using your electric mixer mix until smooth and creamy about 5 minutes. Cool the cookies and then drizzle glaze over the cookie pan. Smooth glaze to edges evenly. Cut bars into finger-sized portions with a sharp knife.
