Jersey Corn with Garlic-Chive Butter

New Jersey is famous for it’s corn-on-the cob.  This week’s recipe Jersey Corn with Garlic Chive Butter is tasty and delicious.  I microwave my corn-on-the cob in the husk.  First I soak it in a large pan of water for 30 minutes.  Then I microwave it.  When you cook corn in the husk it maintains it’s fresh flavor and intensity.  My garlic-chive butter sauce is super easy to make also.  Corn or maize is in season in the summer.  It contains Vitamins A, B, C, potassium and lots of fiber.  So the next time you want to try something different for your corn-on-the cob check out this recipe.

  • Trim both ends of your corn with a sharp knife removing bottom stalk and corn hair. Soak your corn-on-the-cob in the husks in a sink of cool water for 30 minutes. Place corn in microwave and cook on high for 8 minutes. Let cool. In a small bowl add butter, garlic and chives. Cook in microwave for one minute on high. Stir with a fork. Carefully peel corn from husks using two paper towels. Place corn on serving plate and then spoon butter over the corn. Serve immediately.
