Creamy Vanilla Pudding with Strawberries & Bananas

I wanted to share this wonderful Creamy Vanilla Pudding with Strawberries and Bananas with everyone.  This is definitely a comfort food.  My mom made delicious homemade cooked pudding when we were kid’s.   The smell of it cooking on the stove would fill the kitchen with it’s sweet, heady aroma and we couldn’t wait to sample it.  Once it was finished cooking my mom would spoon it into individual, small, glass cups and it headed into the refrigerator.  She would let us lick the warm pudding off the spoon before sending it all to the sink for washing.  All of my siblings liked the thick crust layer on top of each cup.   However, if you don’t, you can cover each cup with plastic wrap and push it into the top.   I enjoy eating this warm from the pot but be careful to let to cool for 10 minutes because it is boiling hot.  I recommend chilling for at least 8 hours before serving it cold with whipped cream.  Enjoy!

    Prepare strawberries & bananas & Heat up milk
  • Set aside 4 whole strawberries and cut in half. Cut off stems on remaining strawberries and chop up. Slice up a banana. Place into a small bowl and add 2 T orange juice and 1 T sugar. Stir until combined. Set aside. In a large saucepan add milk, cream and 1/2 c sugar. Stir until sugar is dissolved. Heat on medium heat until beginning to boil while stirring occasionally.
  • Separate Egg yolks from Egg Whites
  • While milk mixture is heating up work on the eggs. Separate 4 egg yolks from whites using two separate bowls. Use a medium sized bowl for the yolks. Add 2 whole eggs to egg yolks with cornstarch and 1/2 cup sugar. Beat with a fork until smooth.
  • Tempering - heating milk and eggs
  • Tempering. Tempering means to raise the temperature of a cold liquid (eggs) by slowly stirring in a hot liquid (milk). Take 2 T of hot milk mixture and slowly stir it into the bowl of eggs. The eggs will curdle if they start to cook. Then gradually pour the egg mixture slowly drizzling it into the hot milk mixture on the stovetop. Stir constantly. The pudding will begin to thicken. Bring it to a boil and boil for one minute.
