Spicy Beef Tacos

I like to eat some light dinners over the summer.  This week I’m sharing my Spicy Beef Tacos dish which is fairly quick to cook and pull together.  The key to great tacos are all of the fillings you use to create them.  Other then the tasty meat filling I cut up some lettuce and tomatoes and put everything in little bowls on the table.  I also use shredded cheddar cheese, sour cream and a mild salsa to complete my “make your own taco” setup.  Happy Cooking!

  • Chop up onion. Heat up large skillet on medium high heat and add 2 T oil. Sauté the onions and ground beef until cooked through about 10 minutes. Stir in tomato sauce, chili powder, cumin, crushed red pepper, salt and pepper. Cook on low for 10 minutes, stirring occasionally.
  • Prepare "make your own taco" fixings. Place in individual bowls chopped lettuce, tomato, avocado, shredded cheddar cheese, salsa and sour cream.
  • Heat oven to 325* and bake taco shells for 7 minutes. Fill tacos with various fixings and serve warm.
