Crockpot Pork Chops & Sweet Potatoes

Winter is a great time to create wonderful Crockpot dishes.  My Crockpot Pork Chops & Sweet Potatoes dish is a nice change of pace for dinner.  When you slow-cook the pork chops in a crockpot they become more tender and juicy.  I’ve combined sweet potatoes, onions, and apple with brown sugar, cinnamon and nutmeg to add lots of seasonal flavor to this pork dish.  Your home will be infused with the sweet aroma of this meal while it’s cooking away in the crockpot.  Happy Cooking!

  • Turn crockpot onto Low Heat and start warming it up. Rinse, peel and chop up sweet potatoes into large chunks, cut up apple and leave the skin on and dice up onions. Set aside while you sear the pork chops.
  • Heat up a skillet to medium high heat and add 2T oil. Sprinkle pork chops with 1/2 t salt, 1/4 t pepper and oregano. Add pork chops and onions to skillet and lightly brown for about 3 minutes. Turn over pork chops with tongs and brown the other side for another 3 minutes.
  • Add the sweet potatoes, apple, and chicken broth to the crockpot on top of the pork chops and onions. Stir to mix all ingredients. Sprinkle everything with 1/2 t salt and 1/4 t pepper. Then, sprinkle the brown sugar, cinnamon and nutmeg over pork chops, sweet potatoes and apples.
  • Cook dinner in crockpot on Low Heat for 6-8 hours. Remove the pork chops and sweet potatoes from crockpot into a serving bowl. Make gravy by adding 1 T cornstarch to 1/4 cup water in a small glass and stirring with a fork. Pour cornstarch slurry into crockpot liquid and whisk until smooth. Cover and cook for 5 minutes until thickened. Serve dinner with my Steamed Asparagus & Vegetable Medley.
