Mardi Gras Vanilla Cupcakes

Vanilla  homemade cupcakes are always a delicious treat to make and decorate.  My Mardi Gras Vanilla Cupcakes are decorated with my Vanilla Buttercream Icing and purple, gold and green sprinkles.  This vanilla cupcake recipe is easy to make, and they are moist and fluffy.  If you choose to make large sized cupcakes with this recipe, it makes 12 – 1/2 cup cupcakes.  If you are using smaller paper cups you can make 18 smaller cupcakes.  Happy Cooking!

  • Preheat oven to 350*. Set up electric mixer and add 4 eggs. Using the whisk attachment beat the eggs until light and fluffy for about 3 minutes. Pour the sugar into the mixer and beat again until well blended around 3 minutes more.
  • In a separate bowl sift all dry ingredients; flour, salt and baking powder. Set aside. Then, melt butter in the microwave for one minute. Let it cool for several minutes then add milk and stir until incorporated.
  • Slowly add the flour mixture to your mixer and alternate with the milk mixture. Drop in vanilla and beat until smooth and creamy. Line your muffin pan with paper cups. Fill each cup with 1/2 cup of batter if using the large paper cups. Use 1/3 batter if using small paper cups
  • Bake at 350* for 30-35 minutes until lightly browned. Test doneness by inserting a fork into center of cupcake that comes out dry. Let cool for 1 hour before adding icing and sprinkles.
