Baked Spinach Puffs Recipe

I got my inspiration for these Baked Spinach Puffs from my husband’s family.   There are many appetizer choices available right now online.   However, many of them involve some type of meat.   This recipe is great for those vegetarians and non-vegetarians in your circle of family & friends.  Fresh baby spinach is a great choice for an appetizer ingredient.  Our family holds a large Christmas Eve party each year.   Everyone brings a covered dish to contribute to the festivities.  My sister’s all host the party.   The whole family comes including my 3 sisters, 2 brothers, my twelve nieces and nephews and all of their children.  It’s a large group to feed but we love hosting it every Christmas Eve.   This appetizer is popular in my family because the kids like finger food.  These Baked Spinach Puffs can become a family favorite for your gang, too.

  • Preheat oven to 400*. Cut up a loaf of bread into cubes. Then cover cookie sheet with foil and spray with cooking spray. Next, spread bread cubes on a baking sheet and drizzle with oil. Sprinkle bread with garlic powder, poultry seasoning and oregano. Bake in the oven for 10 minutes, until lightly browned. Remove from oven and set aside.
  • Chop up onion, mushrooms and spinach into small pieces. Using a large skillet, melt butter on medium heat. Sauté onion, mushroom and spinach, sprinkled with salt and pepper, until wilted for about 5 minutes. Stir often. Finally, turn off heat and let cool for 5 minutes.
  • Lift up the foil under the bread cubes and pour them into a large mixing bowl. Then spoon spinach mixture on top. Beat the eggs and add them and the parmesan cheese to bowl. Mix ingredients together with wooden spoon. Lastly, scoop out a large spoon of bread mixture and roll into round puffs. Place on lightly greased cookie sheet.
  • Bake at 325* oven for 15 minutes. Remove from oven and turn over the puffs using tongs. Next return to oven and bake for 10 more minutes until crispy and browned. Serve with sour cream for dipping. The spinach puffs can be frozen in a plastic storage bag until partytime. Remove frozen puffs from freezer and let thaw for 30 minutes. Cook as shown above.
