Asian Fried Rice

If you enjoy Chinese takeout food you probably have tried the fried rice.  This is my homemade Asian Fried Rice recipe.  I learned how to make fried rice when we lived in Hawaii.  I took cooking classes there from an Asian woman and her food was delicious.  I like to use White Basmati rice for this dish but any rice that you like will work.  Basmati rice has a pleasant taste and is somewhat sticky.  Are you wondering why Asian rice is pan fried?  Well, the answer is simply that frying the rice gives it a different texture.  It makes the rice a little crispy and lightly browned so it enhances the flavor of the dish.  Happy Cooking!

  • Dice up onions, zucchini, mushrooms and garlic on a cutting board and set aside. Cook rice - In a medium saucepan add water, rice, butter, salt and pepper. Cover pot and bring rice to a boil. Turn heat down to low and simmer for 15 minutes. No stirring required. Rice should be soft. Set aside.
  • In a large skillet heat 1 T oil and set temperature to medium high heat. Add all diced up vegetables and dried ginger to heated skillet. Sauté with a wooden spoon for 3-4 minutes stirring frequently. Vegetables should begin to soften up and become lightly browned.
  • Then, add the cooked rice to the skillet along with the soy sauce. Stir to mix together all ingredients. Cook for 5 more minutes, stirring occasionally. Rice will become lightly browned. Serve with Asian Teriyaki Skewers.
