Chocolate Covered Strawberries

It’s Valentine’s Day and one of my favorite chocolate treats are my Chocolate Covered Strawberries.  You’ll need some big, juicy fresh strawberries for this dish.  The chocolate dip is made using either dark melting chocolate or dark chocolate chips.  Once I dip the strawberries into the melted chocolate I let them dry on foil for 10 minutes.  Then, I melt the white chocolate and give the berries another dip.  Finally, I give them a quick dip in some colorful sprinkles.  The chocolate covered strawberries will be ready to eat and enjoy in about 15 minutes.  Keep the berries stored in your refrigerator.  Happy Cooking!

  • Fill the bottom of a double boiler pan with water. Heat on medium high until water comes to a gentle boil. Turn heat down to medium. Place the top double boiler pan on the bottom pan. Add the dark melting chocolate and 1 T oil. Stir until melted with a heat proof spatula or wooden spoon.
  • Remove top pan and pour melted chocolate into a small, heat proof bowl for dipping strawberries. Turn off heat under double boiler pan. Place a large sheet of aluminum foil on table or cutting board.
  • Stir the warm chocolate with a small bread knife. To dip - hold the top green leaves and dunk the whole strawberry into the warm chocolate quickly, turning to evenly coat. Place dipped strawberry onto the foil to cool for 10 minutes and continue dipping more berries.
  • Rinse out top pan of double boiler and turn heat back onto medium in pot. Add white melting chocolate or chips into top of double boiler pan with 1 T oil. Stir until melted with spatula. Remove pan from heat and pour melted chocolate into small heat proof bowl. Then, quickly dip berry into sprinkles and place on foil to cool.
  • Let berries cool on foil for at least 15 minutes. Chill in refrigerator for 1/2 hour before serving. Keep refrigerated for best results.
