Andouille Sausage & Asparagus Omelette

I enjoy making omelettes for breakfast with sausage and fresh vegetables.  My Andouille Sausage & Asparagus Omelette is filled with spicy sausage, fresh asparagus and tomatoes.  Andouille is a coarse-grained sausage often associated with Louisiana Cajun cuisine.  It’s made with pork, garlic, pepper, onions, wine and seasonings.  Since the sausage is double smoked it has lots of flavor and heat.  This omelette is hearty and filling and makes a great addition to your breakfast or brunch menu.  Happy Cooking!

  • Trim asparagus tips from the bunch of asparagus and discard bottom half of asparagus. Then, chop up tomato into small chunks. Cut one Andouille sausage link into small slices and half it. In a small bowl beat eggs, salt and pepper with milk using a whisk.
  • Heat a skillet with 1 T oil on medium high heat. Add sausage, asparagus and tomatoes to skillet. Cook turning frequently until lightly browned. Turn heat to medium, pour egg mixture over ingredients in skillet and stir occasionally. Cook through for 5 minutes then top with cheese. Serve warm.
