Orange Dill Salmon

Salmon is one of the most popular fish in America and also considered very healthy.  It’s  loaded with protein and vitamins A, B, D and potassium.  Salmon is a fatty fish but has heart healthy omega 3 fatty acids.  There are many different types of salmon.  Pacific Salmon or wild-caught salmon is caught in oceans and rivers.  Pacific Salmon has names like King, Coho, Sockeye and Pink and has a rich, robust flavor.  Atlantic Ocean salmon is typically farm-raised and has a milder flavor with medium firm flesh and large flakes.  My Orange Dill Salmon dish can be grilled or baked in the oven.  It has a light fresh orange flavor with a hint of dill.  Happy Cooking!

  • Preheat oven or grill to 375*. Cover baking sheet with aluminum foil and spray with cooking oil spray. Place salmon fillets on sheet and sprinkle with garlic, dill, salt and pepper. Drizzle with olive oil. Bake in oven for 20-25 minutes until cooked to desired doneness.
  • Making orange dill sauce
  • Zest the orange and drop 1 t into medium bowl. Then, squeeze out juice from 4 oranges. Remove seeds by pouring orange juice over another medium sized bowl using a strainer. Heat the orange juice, orange zest, honey, and dill in a saucepan on medium heat and stir with a whisk. Bring sauce to a light boil. Turn heat to simmer.
  • Using a fork, mix cornstarch with water in a separate cup. Pour cornstarch water into saucepan with orange juice and using a whisk stir until thickened, about 5 minutes. Serve sauce over cooked salmon.
