Salads are refreshing especially in the summer. This week I’m making my Spinach & Strawberry Salad. Spinach goes really well with strawberries so I wanted to add them to this salad. Spinach is a healthy choice in a salad and now comes packaged conveniently in prewashed bags. I like to use baby spinach because they are more tender and have smaller leaves. Spinach has Vitamins A, C and K and lots of fiber. Strawberries are also rich in Vitamin C. I use Raspberry Balsamic vinegar in the dressing for flavor and because it nicely coats the spinach. Assemble salad

Slice up Vidalia onion into strips. Slice up mushrooms and strawberries. Remove stems from spinach leaves. Place all ingredients in a large salad bowl and set aside. Measure out sunflower seeds and set aside.
Make salad dressing

Add raspberry balsamic vinegar, vegetable oil, maple syrup, salt & pepper to a bowl. Whisk together until combined. Pour over spinach salad and toss together. Sprinkle with sunflower seeds. Serve immediately.
