When it comes to easy side dishes I recommend my Rice and Green Peas dish. I use minute rice which is a precooked enriched long grain rice and cook it in the microwave. Rice is enriched with Vitamin B and folate. Rice is a staple for many countries in the world and cooks in just 8 minutes. I use frozen peas in this dish. Green peas are one of those super vegetables which contain Vitamins B, C and K, fiber and many minerals. They also are high in antioxidants and healthy fat.
