Rice and Green Peas

When it comes to easy side dishes I recommend my Rice and Green Peas dish.   I use minute rice which is a precooked enriched long grain rice and cook it in the microwave.  Rice is enriched with Vitamin B and folate.  Rice is a staple for many countries in the world and cooks in just 8 minutes.  I use frozen peas in this dish.  Green peas are one of those super vegetables which contain Vitamins B, C and K, fiber and many minerals.  They also are high in antioxidants and healthy fat.  They can be added to many side dishes for color and flavor.  Happy Cooking!

Ingredients
  • 2 cup minute rice
  • 2 cup chicken broth
  • 1 cup green peas (frozen)
  • 1 tbsp butter
  • 1 tbsp salt
  • 1/2 tsp pepper
Instructions
  1. In a microwave proof casserole dish add rice, chicken broth, peas, butter, salt and pepper. Stir well. Cover and cook in the microwave for 8 minutes. Serve warm.
