If you are looking for a refreshing, light, summer salad I recommend you try my Jersey fresh Cucumber, Tomato & Mozzarella Salad. Tomatoes and cucumbers are both high in Vitamins C and K, potassium and fiber. Red tomatoes, which are a member of the nightshade family, are considered a fruit. They are a good source of the antioxidant lycopene which promotes heart health. I also use the Bocconcini sized mozzarella balls in this dish. Bocconcini means “little bites” or “small mouthfuls” in Italian. Mozzarella is a semi-soft cheese that’s creamy and elastic. It tastes buttery and sweet and enhances the flavor of the tomatoes and cucumbers. Fresh basil goes well in this salad also. I make a homemade Italian dressing to dress this dish. As with most salads this one should be chilled for a few hours before serving.
