Cucumber, Tomato & Mozzarella Salad

If you are looking for a refreshing, light, summer salad I recommend you try my Jersey fresh Cucumber, Tomato & Mozzarella Salad.   Tomatoes and cucumbers are both  high in Vitamins C and K, potassium and fiber.  Red tomatoes, which are a member of the nightshade family, are considered a fruit.  They are a good source of the antioxidant lycopene which promotes heart health.   I also use the Bocconcini sized mozzarella balls in this dish.  Bocconcini means  "little bites" or "small mouthfuls" in Italian.  Mozzarella is a semi-soft cheese that's creamy and elastic.  It tastes buttery and sweet and enhances the flavor of the tomatoes and cucumbers.  Fresh basil goes well in this salad also.  I make a homemade Italian dressing to dress this dish.  As with most salads this one should be chilled for a few hours before serving.

Ingredients
  • 1 Jersey fresh tomato
  • 1 fresh cucumber
  • 1/2 red onion
  • 1 - 8 oz mozzarella balls (bocconcini)
  • 1/2 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp fresh basil
  • 1/2 tsp salt
  • 1/4 tsp pepper
Instructions
  1. Chop up onion into strips. Chop up tomato into chunks. Peel and slice cucumber. In a medium sized bowl add oil, vinegar, salt & pepper. Whisk until well combined. Add vegetables to bowl and gently stir coating them with the dressing. Add mozzarella balls and basil and gently stir to combine all ingredients. Chill for several hours.
