This recipe is my take on Pork and Beans in the crockpot. This dish is a stick-to-your-ribs, hearty dinner for cool autumn nights. I like to cook boneless pork chops in the crockpot so they become tender and juicy. Don’t use bone-in chops as the bones will be floating everywhere in the crockpot. Pork is considered “the other white meat” so it’s important to add lots of flavor using other ingredients. I use canned baked beans flavored with bacon, onions, brown sugar and molasses to create a wonderful, rich taste. This dish can also be baked in the oven if you don’t have a slow cooker. Chop up onion, tomato, mushrooms and bacon. Sauté on medium high heat in a skillet for 5 minutes, turning frequently until softened up. Pour ingredients from skillet into crockpot. Add both cans of baked beans and stir all together with a wooden spoon.

Salt and pepper the pork chops and then place into crockpot covering them with the bean mixture. Cook on low heat for 8 hours or on high for 4 hours. Stir once during middle of cooking time.
