Asian Fried Rice
If you enjoy Chinese takeout food you probably have tried the fried rice. This is my homemade Asian Fried Rice recipe. I learned how to make fried rice when we lived in Hawaii. I took cooking classes there from an Asian woman and her food was delicious. I like to use White Basmati rice for this dish but any rice that you like will work. Basmati rice has a pleasant taste and is somewhat sticky. Are you wondering why Asian rice is pan fried? Well, the answer is simply that frying the rice gives it a different texture. It makes the rice a little crispy and lightly browned so it enhances the flavor of the dish. Happy Cooking!

Instructions

Dice up onions, zucchini, mushrooms and garlic on a cutting board and set aside. Cook rice - In a medium saucepan add water, rice, butter, salt and pepper. Cover pot and bring rice to a boil. Turn heat down to low and simmer for 15 minutes. No stirring required. Rice should be soft. Set aside.

In a large skillet heat 1 T oil and set temperature to medium high heat. Add all diced up vegetables and dried ginger to heated skillet. Sauté with a wooden spoon for 3-4 minutes stirring frequently. Vegetables should begin to soften up and become lightly browned.

Then, add the cooked rice to the skillet along with the soy sauce. Stir to mix together all ingredients. Cook for 5 more minutes, stirring occasionally. Rice will become lightly browned. Serve with Asian Teriyaki Skewers.
