This recipe is my take on Pork and Beans in the crockpot. This dish is a stick-to-your-ribs, hearty dinner for cool autumn nights. I like to cook boneless pork chops in the crockpot so they become tender and juicy. Don’t use bone-in chops as the bones will be floating everywhere in the crockpot. Pork is considered “the other white meat” so it’s important to add lots of flavor using other ingredients. I use canned baked beans flavored with bacon, onions, brown sugar and molasses to create a wonderful, rich taste. This dish can also be baked in the oven if you don’t have a slow cooker.
