Sweet Barbecue Pork Spareribs

If you are looking for a tasty barbecue pork spareribs dish that you can cook in your oven, my Sweet Barbecue Pork Spareribs recipe is for you.  Even when it’s not warm enough outside to fire up the grill you can enjoy that same flavor sensation straight from your oven.  I enjoy barbecue sauce that is tomato based with a sweet, sticky glaze which sticks to the ribs.  Eating ribs can be a messy business so sometimes I make this dish with boneless pork spareribs that you can cut with a knife.  It works just as well with bone-in ribs.  I usually sprinkle a rub on my ribs to create layers of flavor underneath the barbecue sauce.

All across our nation each region specializes in it’s own brand and style of barbecue sauce.  It’s really a personal choice based on the many ingredient options out there.  My husband, Gary likes this particular barbecue sauce because it doesn’t taste like the jarred version.  In South Jersey a lot of us like some char on the ribs so you can finish these ribs under your broiler to create that smoky flavor.  Since ribs need long, slow cooking to create that tender meat I use the braising technique.  Braising means to cook a meat in a covered dish in or over gentle heat with a little liquid.

    Dry Rub Directions
  • Make a dry rub by mixing together in a bowl the garlic powder, paprika, salt, pepper and brown sugar with a fork. Sprinkle dry rub over pork spareribs on both sides. Place spareribs in a baking pan on a rack . Pour beef broth underneath the ribs.
  • Making barbecue sauce
  • Using a medium sized saucepan on stovetop, prepare barbecue sauce by melting 4T butter and then sautéing onions in butter until softened. Add garlic to saucepan and cook for 2 minutes. Add an additional 4T butter, ketchup, vinegar, brown sugar, water, mustard and lemon juice to the saucepan. Cook over medium heat bring to boiling, stirring often. Then, let your sauce simmer on lower heat for 20 minutes, stirring occasionally. Set aside 1/2 cup of sauce in a small bowl. Spoon remaining barbecue sauce over ribs coating them well.
  • Braising ribs in the oven
  • Cover pan with aluminum foil. You will be braising the ribs which means to cook covered in a small amount of liquid. Cook in oven at 350* for 45 minutes. Remove foil and continue cooking for 15 minutes. Brush ribs with sauce you set aside and then place ribs under broiler for 5-7 minutes until crispy and brown. Watch the ribs carefully while broiling to make sure they don't overcook.
