Oatmeal Squares

This is another great dish highlighting Old-Fashioned oats.  I started making this baked snack dish called Oatmeal Squares when I worked as a Chef for a residential ballet school in Philadelphia.  The ballet students were in high school and loved a little sweet treat at the end of their busy day of school and dance.  They used to practice their dance moves all around the recreation room while they took turns eating.  One of their favorite dances was Michael Jackson’s Thriller song.  They were very entertaining and enjoyed an audience.  I must admit they were fun to cook for.  This was definitely one of their favorite snacks.

  • Combine flour, softened butter, brown sugar, cinnamon, salt and baking soda in a large bowl. Using a mixer beat at low speed until mixture is combined. Add Old-Fashioned rolled oats and mix until crumbly. Spray a 13 x 9 inch pan with cooking spray. Using a wooden spoon spread half of the mixture in bottom of pan. Press down with wooden spoon.
  • Spread apricot jam onto crumb mixture in pan. Stir peanuts and chocolate chips into remaining crumb mixture in bowl. Stir to combine. Sprinkle pan with remaining crumb mixture. Bake at 400* for 20 minutes until lightly browned. Cool and then cut into squares.
