No-Bake Cheesecake with Strawberries

Sometimes I’m in the mood for a quick and easy dessert.  My No-Bake Cheesecake with Strawberries doesn’t require any baking and is easy to prepare.  This pie is whipped up in your mixer bowl and gets topped with fresh strawberries and chocolate sauce.  The filling, which is made from cream cheese, heavy cream and sweetened condensed milk, will remind you of a light, fluffy cheesecake.  The pie crust is a crushed graham cracker style and tastes great.  Once assembled the whole pie is chilled in your refrigerator for several hours.  Happy No-Bake Cooking!

    Preparing graham cracker crust
  • Place graham crackers into a gallon size plastic bag and crush using a rolling pin. Melt the butter in the microwave for 30 seconds. Pour the butter into a mixing bowl along with cracker crumbs and sugar. Stir the ingredients with a spatula until well combined. Press into pie pan using spatula and bottom of a glass. Set aside.
  • Making cheesecake filling
  • Using an electric mixer whip heavy cream and 10X sugar on high until stiff, pour into another bowl. Add softened cream cheese to bowl and beat for 3 minutes. Then, add sweetened condensed milk, orange juice and vanilla to the bowl. Whip at high speed until light and fluffy for 5 minutes. Gently fold in whipped cream and pour mixture into crust. Chill in refrigerator for 3-4 hours or overnight.
  • Making topping
  • Slice up strawberries and set aside. To make chocolate sauce heat up 2 cups of water and bring to a boil in the bottom of a double boiler pan or saucepan. In the top pan or heat proof bowl add the chocolate chips and heavy cream and place over bottom pan, covered. Remove from heat and let sit for 5 minutes. Using a whisk, stir chips until smooth. Let cool for 15 minutes.
  • Pour cooled chocolate sauce and some strawberries over chilled cheesecake. Also top with some hershey kisses and m&m's for decoration. Return to refrigerator and let harden for 10 minutes before serving cold.
