Hawaiian Pineapple Upside-Down Cake

I enjoy baking and creating homemade delicious cakes, pies and cookies.  Baking takes me back to childhood and helping my mom bake something special for dessert.  She made lots of different kinds of cakes but one of my favorites was Pineapple Upside-down cake.  I think I liked the name, too.  This is a small, one layer cake that is best served warm with ice cream or whipped cream.  The brown sugar in the bottom of the pan caramelizes during baking and creates a candy-like glaze.  The pineapple adds a touch of sweetness to each bite.  Fresh or canned pineapple slices work well with this recipe.  Happy Baking!

    Make Cake Batter
  • Preheat oven to 350*. Add brown sugar and oil to mixing bowl. Using electric mixer, cream together the sugar and oil until fluffy. Add egg and vanilla to mixing bowl, beat well. Add alternately the dry ingredients; flour, salt, baking powder and the wet ingredient; the pineapple juice. Beat for 2 minutes on medium high until smooth.
  • Make cake topping
  • Melt butter in microwave for 25 seconds. Pour melted butter into round, 8 inch pie pan, spread across the bottom. Sprinkle brown sugar on top of butter. Arrange the pineapple rings on top of butter/sugar mixture. Pour cake batter on top of pineapples and smooth evenly with spatula. Bake at 350* for 50-60 minutes. Let stand for 5-10 minutes before slicing. Serve warm with ice cream or whipped cream.
