Atlantic codfish is a low-fat, flaky and mild white fish which has a delicate flavor and is very versatile. Codfish is high in protein and Vitamins B-6, B12 & D and also has potassium and magnesium. My Codfish Soft Taco recipe is easy to make and is perfect for a light summer dinner. I prefer soft taco shells with seafood because they wrap nicely around the delicate fish. Just like regular tacos you can fill them with lettuce, tomatoes, cheese and a light sauce. I like a mayonnaise aioli sauce with seafood tacos. The big advantage of tacos is that everyone in the family can fill them with ingredients that they enjoy and create their own special taco combos. Happy Cooking!
Preheat oven to 350*. Sprinkle codfish with salt, pepper, red curry powder and a drizzle of olive oil. Bake codfish on a foil covered sheet pan in the oven for 20 minutes. Set aside and let cool. Cut into small pieces and place into a small bowl.
Make mayonnaise aioli sauce
Mince garlic, chop up tomato into chunks, tear lettuce into pieces and squeeze lemon for juice. In a small bowl mix together mayonaisse, garlic, oil and lemon juice. Using a whisk stir until smooth and creamy. Set aside.
Assemble fish tacos
Assemble the rest of the taco ingredients in individual bowls; lettuce, tomato chunks, and cheese. Make tacos using soft taco shell, lined with lettuce, a piece of fish, tomatoes, mayo aioli sauce, and sprinkle with cheese. Serve immediately.
