Chocolate Macadamia Fudge

Happy Valentine’s Day!  Since it’s Valentine’s Day weekend I thought I would share something chocolatey and sweet.  My Chocolate Macadamia Fudge is pretty easy to make and chill.  I use either dark chocolate chips or melting dark chocolate for this recipe.  I top the fudge with macademia nuts to give it a flavor boost.  Chocolate fudge is a New Jersey tradition and is usually found in candy stores at the shore near the beach.  You can prepare this recipe in a double boiler on the stovetop or make it in your microwave.  The fudge needs to be chilled in the refrigerator for several hours.  Happy Cooking!

  • Grease a square pan or casserole dish with butter or shortening. Using a double boiler pan heat pot of water to a boil in the bottom pan. Place the top pan of the double boiler over the bottom pan of boiling water. Then, add melting chocolate or chips, butter, milk, and salt to the top pan.
  • Using a heat proof spatula or wooden spoon stir mixture constantly over medium heat until chocolate chips melt. Once the chocolate is all melted then sprinkle 10X sugar into the pan. Stir until well combined. If fudge is too stiff add a little more milk.
  • Remove top pan of double boiler from heat and add the vanilla. Stir until smooth and creamy. Pour the hot chocolate mixture into the greased square pan or casserole. Sprinkle the macadamia nuts on top of the chocolate fudge. Push nuts into fudge mix until nuts are covered by chocolate.
  • Let fudge sit on the counter for 1/2 hour and then chill in the refrigerator for 2-3 hours or overnight. Slice fudge into squares and serve chilled.
