Chicken Bowtie Soup

Now that fall weather has arrived, I love the smell of homemade soup cooking on the stove. My Chicken Bowtie Soup is a hearty, flavorful soup filled with chicken and noodles. Chicken noodle soup has been a home remedy for helping with cold symptoms since I was a child. Soup is said to “warm your soul.” I use leftover chicken and packaged chicken broth to make this soup more quickly and easily. I think the bowtie noodles add to it’s appeal. Happy Cooking!

  • Chop up onion, carrots and celery into small dice pieces and set aside. Cut cooked chicken into bite-sized pieces and set aside. Add 2 T vegetable oil to a large stockpot and place on stovetop over medium high heat. Sauté vegetables for 5 minutes stirring with a wooden spoon until softened. Add cut up chicken to pot and lightly brown it.
  • Pour chicken broth into stockpot and add all of the spices; parsley, thyme, salt and pepper. Bring pot to boil for several minutes. Add the bow tie pasta noodles to the pot stirring gently. Let noodles boil for 8 minutes. Then, lower the heat to simmer and cook for 30 minutes stirring occasionally.
  • Check the doneness of the bow tie noodles and when they are soft the soup is finished. Serve in soup bowls along with crackers or french bread. Happy Cooking!

  1. Honestly this soup is so delicious! I don’t normally leave comments but I had too with this one… So good thank you for the recipe.. the only thing I changed was i added to. 2 32 oz chicken broths because the pasta soak up the broth when it sits after cooking…
