I enjoy making omelettes for breakfast with sausage and fresh vegetables. My Andouille Sausage & Asparagus Omelette is filled with spicy sausage, fresh asparagus and tomatoes. Andouille is a coarse-grained sausage often associated with Louisiana Cajun cuisine. It’s made with pork, garlic, pepper, onions, wine and seasonings.
