We had our first real taste of winter this week with record snow accumulation and cold temperatures. The snowfall was quite welcome to most of us New Jersey folks who enjoy seeing everything covered in a beautiful blanket of white, pristine snow. Time to pull out your hats and mittens and head outside for some shoveling or sledding. My menu this week is Ham & Spinach Brunch Casserole which is a hearty, great tasting version of ham, eggs and spinach. Along with this dish I’ve created a light Apple Salad with Raspberry Sauce that I think you’ll enjoy. Happy Cooking!
