Tasty Banana Peanut Muffins

I enjoy eating breakfast every morning and some days I just want my cup of coffee with a freshly baked muffin.  I like filling my kitchen with the aroma of fresh baked goods.  These Tasty Banana Peanut muffins are moist and delicious and a family favorite.  Baking is an art and you need to carefully follow a scientific formula to be successful.  It’s less important and you can be less exacting with your ingredients when you are cooking regular meals.  So be sure to carefully measure all of the ingredients for your baked goods.  It’s not a time to guesstimate a pinch of this and a dash of that.  You can replace the peanuts in this recipe for any nut that your family likes to eat.  I add the peanuts to increase the amount of protein in these muffins.  I also try to use very ripe bananas for this recipe since I seem to always have slightly browned ones in my fruit bowl.  These muffins will brown beautifully and be slightly crispy.

    Preparing peanuts, cinnamon/sugar mixture & Dry Ingredients
  • Preheat the oven to 350*. Place peanuts in a plastic sandwich bag. Using a rolling pin, roll over the peanuts to break them up into small pieces. Set aside. Mix 2 tsp. sugar with 1 tsp. cinnamon in small bowl. Set aside. Using a zester, zest a orange and place in small bowl. Set aside. In a medium sized mixing bowl, sift the flour, baking powder and salt together. Use a wire mesh strainer if you don't have a sifter.
  • Preparing wet ingredients
  • Pour into a blender the egg, soft butter, milk, and sugar. Add 1 tsp. of orange zest to blender, save remaining zest for topping muffins. Break up bananas and add to blender and puree for 1 minute until smooth. Pour the wet blender ingredients into the dry ingredients in the mixing bowl, stir together using a spatula. Batter should be smooth and moist. Add the peanuts to the batter and stir till combined.
  • Spray muffin tins with cooking spray. Spoon batter into a 1/3 cup measuring cup and level it off. Using the spatula drop the batter into the individual muffin tins. When you measure the batter using the 1/3 cup all of the muffins will be the same size. Sprinkle muffins with cinnamon sugar mixture, a couple of peanuts and a little zest.
  • Baking Muffins
  • Bake muffins at 350* for 25 minutes. Test doneness by using a fork inserted in center of a muffin, when done the fork should come out clean. If it's still sticky leave muffins in oven for several more minutes. The muffins should look lightly browned with crispy edges. Let cool in pan for 5 minutes and then place on wire racks for final cooling. This recipe makes 12 medium sized muffins.
