White Chocolate Buttercream Frosting

My White Chocolate Buttercream Frosting is a rich frosting made with butter, 10-X sugar and melted white chocolate pieces.  This frosting goes well with my St. Patrick's Day Chiffon Cupcakes.  Happy Cooking!

Ingredients
  • 2 sticks butter
  • 1 cup 10-X confectioner's sugar
  • 1/3 cup white chocolate pieces or chips
  • 1 tbsp milk
Instructions
  1. Let butter soften for 2 hours. Melt 1/2 cup of white chocolate pieces or chips in a small bowl in the microwave for 1 minute on high. Stir chocolate until smooth.
  2. Using an electric mixer with the whisk attachment whip the butter until fluffy and smooth. Add the 10-X sugar to mixing bowl with the milk. Whip until smooth. Stir in the cooled melted white chocolate. Whip until fluffy and stiff.
  3. Using a spatula scoop some frosting onto cupcake and spread with a butter knife until smooth. Let sit for 5 minutes before serving. Recipe should frost 12 cupcakes.
