Summer Oatmeal with Fruit

I enjoy a nice bowl of warm oatmeal in the winter months.  But in the summertime heat I prefer something cold for breakfast.  When I attended Culinary School one of my chefs was originally from Switzerland and he introduced us to muesli.  Basically, it's cold oatmeal with fruit and nuts.  I'm sharing my recipe for Summer Oatmeal with Fruit this week.  I like to use fresh strawberries, fresh blueberries and dried pineapple in this dish.  I top it with peanuts and my husband tops it with walnuts, it's up to your individual taste.  Happy No-Cooking!

Ingredients
  • 2 cup Old-Fashioned rolled oats
  • 2 cup milk or light whipped cream
  • 2 tbsp honey
  • 1/2 tsp cinnamon
  • 1 cup fresh strawberries
  • 1 cup fresh blueberries
  • 1/2 cup dried pineapple
  • 1/3 cup peanuts or walnuts
Instructions
  1. In a large bowl with a lid add Old-Fashioned rolled oats, milk, honey, and cinnamon. Stir together. Chop up strawberries and add to bowl along with blueberries and dried pineapple. Stir to combine and cover with a lid. Place in the refrigerator overnight to soak and develop flavors.
  2. In the morning, stir gently. Add additional milk if too thick. To serve top with peanuts or walnuts and a drizzle of honey.
