Old Fashioned Molasses Cookies

Since the Christmas holidays are approaching quickly it's time to think about baking some treats.  My sister, Christine loves making her Old Fashioned Molasses Cookies for her 2 sons, their wives and 8 grandkids. Chris often hosts our annual Family Christmas Eve party and will make us these cookies.   The molasses cookies are big and rich with that unmistakeable taste of molasses and cinnamon.  They are one of her families favorite cookies.  These cookies smell wonderful while they are baking so your house will be filled with that delectable scent for hours.  Happy Cooking!

Ingredients
    Wet ingredients
  • 1 cup sugar
  • 1 cup shortening
  • 1 cup molasses
  • 1 egg
  • Dry ingredients
  • 1 cup coffee (cooled)
  • 4 cup flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp ginger
Instructions
  1. Preheat oven to 325*. Using an electric mixer cream together the wet ingredients; sugar, shortening, egg and molasses until smooth and creamy. Gradually stir in the dry ingredients; coffee, flour, baking soda, cinnamon and ginger until well blended.
  2. Batter will be thick and creamy. Drop batter by tablespoon onto greased cookie sheet. Cookies will be large and round. Bake at 325* for 10-15 minutes until lightly browned.
