Lite Baking Powder Biscuits

These homemade biscuits are not only fluffy and delicious but they are also filled with healthy ingredients.  My sister, Judy developed this recipe for Lite Baking Powder Biscuits for her family and was kind enough to share them with us.  She was able to incorporate flaxseed meal, oats and wheatgerm into these classic biscuits for added texture and flavor.  They are easy to make and smell wonderful baking in the oven.  Serve them warm with butter.  Happy Cooking!

Ingredients
  • 1 3/4 cup flour
  • 3/4 cup oats
  • 1/4 cup wheatgerm
  • 1/4 cup ground flaxseed
  • 4 1/2 tsp baking powder
  • 1/2 tsp salt
  • 4 tbsp butter (softened)
  • 3 tbsp olive oil
  • 3/4 cup milk
  • 1 whole egg
Instructions
  1. Preheat oven to 425*. Mix all dry ingredients in mixing bowl; flour, baking powder, oats, wheatgerm, flaxseed meal and salt. Cut in butter and olive oil with a pastry blender until dough has pea sized chunks. Add egg and milk to a small bowl and whisk together. Add milk mixture to dry ingredients. Stir until well blended and sticks together.
  2. On a floured board, place dough and gently knead and pat into a circle 1/2" thick. Use a biscuit cutter to cut out individual biscuits. Place biscuits on an ungreased cookie sheet. Bake for 20-30 minutes in a 425* oven until golden brown.
