Homemade Pineapple Coconut Ice Cream

I wanted to include an ice cream dessert in this week's menu because I know it's a favorite snack in the summer.  My Homemade Pineapple Coconut Ice Cream is a wonderful treat.  If you have an electric ice cream maker you'll be able to make this recipe in your machine.  Be sure to freeze the freezer bowl of your ice cream maker overnight first.  If you don't have an ice cream maker you can just freeze the milk mixture overnight after you prepare it.  Ice Cream is a frozen mixture of heavy cream, milk, sugar, and flavorings that is slowly beaten in your ice cream maker to add air to the mixture.

Ingredients
  • 1 1/4 cup milk
  • 1 cup sugar
  • 2 cup heavy cream
  • 1/2 tbsp vanilla
  • 2/3 cup crushed pineapple
  • 2/3 cup coconut flakes
Instructions
  1. Place ice cream maker freezer bowl into freezer overnight first. Then, in a large mixing bowl pour in milk and sugar. Using an electric mixer beat the milk mixture for 2-3 minutes. Pour in the heavy cream and vanilla and beat for 2-3 more minutes. Using a spatula stir in 1/3 cup pineapple and 1/3 cup coconut flakes. Pour milk mixture into ice cream maker and place plastic stirring arms inside bowl. Turn on ice cream maker machine and let it mix for 30 minutes.
  2. Pour soft serve ice cream from ice cream maker machine into a large plastic freezer proof container. Stir in 1/3 c pineapple and 1/3 c coconut, mixing to combine well. Place in freezer for 4 hours for soft serve or overnight for solid ice cream.
