Homemade Orange Blueberry Pancakes

My family loves homemade fresh blueberry pancakes on a lazy Saturday morning with maple syrup.  My Homemade Orange Blueberry Pancakes are delicious and chock-full of fresh blueberries with a hint of orange.  Homemade pancakes are made from all of the traditional baking ingredients; flour, sugar, milk, vanilla, eggs, butter and of course some baking powder to help them rise.  I've added orange juice and blueberries for extra flavor.  Just pour a 1/3 cup of pancake batter into a skillet with a little oil on medium high heat.  The pancakes will get bubbles on top while cooking and when the bubbles break it's time to flip them over.  Cook until lightly browned and fluffy.  We top the blueberry pancakes with a pat of butter and some maple syrup.  Happy Cooking!

Ingredients
    Dry Ingredients
  • 2 cup flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • Wet Ingredients
  • 3 cup milk
  • 4 tbsp butter (melted)
  • 3 eggs
  • 1 tsp vanilla
  • 2 tbsp orange juice
  • 2 cup fresh blueberries
Instructions
  1. Squeeze 1/2 orange into a small dish and set aside. Melt butter in a small dish in your microwave for 30 seconds on high. Set butter aside to cool for 5 minutes. In a large mixing bowl add dry ingredients; flour, sugar, baking powder and salt. Stir ingredients together with a whisk to combine.
  2. In a second mixing bowl add wet ingredients; milk, eggs, vanilla and cooled melted butter. Stir wet ingredients using a whisk or fork until well blended. Pour wet ingredients into mixing bowl with dry ingredients. Stir using a wooden spoon until smooth and creamy. Add the orange juice and fresh blueberries to batter.
  3. Heat a large skillet on medium high heat. Add 2 T vegetable oil to skillet. Pour 1/3 cup of pancake batter into skillet. Cook until pancake bubbles break, flip over using a pancake flipper. Cook on second side until lightly browned and fluffy. Only flip pancakes over once. Add additional oil when cooking more pancakes. Place finished pancakes on a plate and hold in the oven at 200* degrees while you are making additional pancakes. Serve pancakes warm with butter and maple syrup.
