Grilled Sausage, Peppers & Onions

When you grill Beef Smoked Sausage it tastes smoky and delicious.  I like to serve grilled bell peppers and onions on top of my sausage.  My Grilled Sausage, Peppers & Onions is an easy summer dinner basic.  I cover a grill pan with aluminum foil and slice up some peppers and onions, give them a little seasoning and some olive  Depending on how crispy you like the vegetables let them cook until lightly browned.  Put the beef smoked sausage directly on the grill grates and turn once during cooking.  They should get grill marks and be nicely browned in about ten minutes.  Serve on long rolls.

Ingredients
  • 1 - 15.3 oz Beef Smoked Sausage
  • 1 red bell pepper
  • 1/2 Vidalia onion
  • 1 tsp cajun seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil
Instructions
  1. Turn on outside grill to medium high. Place foil on a grill pan to cover and spray with cooking spray. Slice up red bell peppers and onion into strips and assemble on grill pan. Sprinkle with olive oil, cajun seasoning, salt and pepper. Place on heated grill and cook for 15-20 minutes turning a couple of times. Vegetables should be lightly browned.
  2. Using tongs place Beef Smoked Sausage directly on grill top. Turn once or twice to create nice grill marks and cook for 10 minutes. Sausage will be browned and crispy. Serve sausage on a long roll and top with peppers and onions. Garnish with mustard or relish.
