Fancy Shrimp Salad Sandwiches

When I'm hanging out at the Jersey Shore I enjoy sampling it's seafood.  My Fancy Shrimp Salad Sandwiches make a great light lunch and taste delicious.  I use cooked, peeled and deveined shrimp in this dish.  It's a great recipe for leftover shrimp from your refrigerator.  Shrimp is one of the most popular shellfish in the world.  At only 84 calories in 3 ounces it's high in protein at 18 grams.  It also has an abundant amount of Vitamin B-12, iodine, iron and is a good source of Omega 3 & 6 fatty acids.  I make my shrimp salad using my Aioli sauce and some red peppers, tomatoes and red onion.  Happy Cooking!

Ingredients
  • 1/2 lb cooked, peeled, deveined shrimp
  • 1/2 cup red bell pepper
  • 1/4 cup red onion
  • 1 small tomato
  • 1 tbsp chives
  • 1/2 tsp dry mustard
  • 1/3 cup aioli sauce
  • Making aioli sauce
  • 1 cup mayonaisse
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic
  • 1 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
Instructions
    Make aioli sauce
  1. Mince two garlic cloves. In a small bowl add mayonnaise and garlic. Squeeze juice from lemon into another bowl, remove seeds. Measure out 1 T of lemon juice and add to mayonaisse mixture. Whisk in vegetable oil, salt and pepper. Set aside. Chop up red onion, tomato, and red pepper into small chunks. Pull tails off of shrimp and chop up.
  2. Make shrimp salad
  3. In a medium sized bowl add shrimp, onion, tomato, red pepper, chives, dry mustard and 1/3 cup aioli sauce. Mix together until smooth. Serve on a toasted bun with lettuce, and tomato. Save remaining aioli sauce in refrigerator as a dip or seafood sauce.
