Chopped Salad with Pears and Cranberries with Raspberry Vinaigrette
I'm a fan of bagged salad fixings. My Chopped Salad with Pears and Cranberries with Raspberry Vinaigrette is a light crunchy salad with a hint of sweetness. You'll need two fresh, ripe pears for this dish along with a bag of Chopped Salad fixings. The lettuce pieces are just cut into smaller, more bitesize pieces in this type of salad. I use raspberry jam and white wine vinegar in this salad dressing along with oil and spices. The jam adds some tartness and sweetness to this vinaigrette. Happy Cooking!

vegetable oil

oregano

Instructions

To make dressing - add raspberry jam, oil, white wine vinegar, honey, oregano, and salt & pepper to bowl. Whisk dressing well until combined. If using a glass shaker jar, shake all ingredients until blended.

Cut up fresh pears into small chunks. Place pears in a small bowl and top with 1/4 cup of salad dressing to keep from browning. Add bag of Chopped Salad fixings to a large salad bowl. Top with pears and dried cranberries. Dress salad with dressing right before serving.
