Chopped Salad with Pears and Cranberries with Raspberry Vinaigrette

I'm a fan of bagged salad fixings.  My Chopped Salad with Pears and Cranberries with Raspberry Vinaigrette is a light crunchy salad with a hint of sweetness.  You'll need two fresh, ripe pears for this dish along with a bag of Chopped Salad fixings.  The lettuce pieces are just cut into smaller, more bitesize pieces in this type of salad.  I use raspberry jam and white wine vinegar in this salad dressing along with oil and spices.  The jam adds some tartness and sweetness to this vinaigrette.  Happy Cooking!

Ingredients
  • 1 - 12.8 oz bag of chopped salad fixings
  • 2 fresh, ripe pears
  • 1/2 cup white wine vinegar
  • 2 tbsp raspberry jam
  • 1 cup vegetable oil
  • 1 tbsp honey
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Instructions
  1. To make dressing - add raspberry jam, oil, white wine vinegar, honey, oregano, and salt & pepper to bowl. Whisk dressing well until combined. If using a glass shaker jar, shake all ingredients until blended.
  2. Cut up fresh pears into small chunks. Place pears in a small bowl and top with 1/4 cup of salad dressing to keep from browning. Add bag of Chopped Salad fixings to a large salad bowl. Top with pears and dried cranberries. Dress salad with dressing right before serving.
