Carrot Apple Slaw

Once the weather heats up it's nice to eat lighter salad dishes like my Carrot Apple Slaw.   This summer salad has a lot of Vitamin A from the carrots and a healthy dose of Vitamin C from the cabbage and the apple.   The apple and raisins also helps with the sweetness and keeps the salad crunchy and refreshing.  This makes a good side dish for barbecue foods.  As with most summer salads I recommend making it ahead of time and letting the flavors blend either for 4 hours or overnight.

Ingredients
  • 1/2 head green cabbage (shredded)
  • 2 large carrots (shredded)
  • 1 medium red delicious apple (chopped)
  • 1/2 cup raisins
  • 1/2 cup mayonnaise
Instructions
  1. Using a box grater shred the cabbage. You can purchase a bag of shredded cabbage in your supermarket. Next grate the carrots. Slice apple into thin slices and cut them in half. In a medium sized mixing bowl add cabbage, carrot, apple, raisins and mayonnaise. Mix well with a spatula.
  2. Refrigerate for 4 hours or overnight. Garnish with some grated carrot.
