Apple Salad with Raspberry Sauce

I enjoy a nice, crispy apple this time of year.  One of my favorite apples is the Honeycrisp Apple but any apple will do for my Apple Salad with Raspberry Sauce.  If you just want a quick fruit salad to serve your family with breakfast try this dish.  I top my freshly sliced apples and raisins with a warm, raspberry sauce made from Raspberry preserves.  This sauce can be cooked in your microwave in minutes.  You can serve the sauce over the fruit or on the side.  Happy Cooking!

Ingredients
  • 4 Honeycrisp apples
  • 1/2 cup raisins
  • 1/4 cup raspberry preserves
  • 1/2 cup water
  • 2 tsp cornstarch
  • 1/4 cup water
Instructions
  1. To make raspberry sauce - in a microwave bowl mix together raspberry preserves with 1/2 cup of water. Stir until combined with a fork. Microwave on high for 1 minute. Then, in a separate cup mix the cornstarch with 1/4 cup of water and stir with a fork. Pour the cornstarch water into raspberry mixture and whisk. Return bowl to microwave and cook for 1 minute. Stir and serve. Cut up apples and raisins and top with sauce.
